Restaurant General Manager

About the role

Restaurant General Manager, Árbol is the restaurant of Hotel Makanda by the Sea, a boutique hotel in the rainforest above the Pacific in Manuel Antonio. The role leads Árbol as its own business, owning the guest experience, the team and the financial results.

Key responsibilities

• Full operational leadership from breakfast service to dinner and private events.
• Ownership of the restaurant P&L, including revenue, food & beverage cost, labor cost and monthly budgeting.
• Hiring, training, scheduling and performance management of the front‑of‑house team.
• Developing and maintaining service standards, purchasing, inventory, par levels and waste control.
• Managing the beverage program, including wine list, cocktails and supplier relationships.
• Planning and executing private dinners, celebrations and special events.
• Monitoring guest feedback, online reviews and implementing corrective actions.
• Weekly reporting to hotel management with clear numbers and next steps.

Required profile

• At least 5 years in restaurant management, including 2 years leading a luxury or upscale outlet.
• Proven results in controlling food cost, labor cost and driving revenue, with quantifiable examples.
• Fluent in English and Spanish to lead a Costa Rican team and serve international guests.
• Hands‑on, calm leader present on the floor during service.
• Legal right to work in Costa Rica and ability to reside near Manuel Antonio.
