General Manager – Restaurant Operations

About the role

The General Manager will oversee three restaurant locations in the Puntarenas Highlands, reporting directly to the owner. This full‑time position is responsible for the complete profit‑and‑loss performance, guest experience, and compliance with Costa Rican regulations.

Key responsibilities

• Own the consolidated P&L for all sites and individual site P&Ls, building annual budgets and monthly forecasts.
• Control food, beverage, and labor costs, adjusting quickly to variances.
• Set menu pricing in collaboration with the owner based on costing and market positioning.
• Manage supplier relationships, negotiate purchases, and consolidate orders to achieve better rates.
• Oversee inventory control, ordering cycles, par levels, waste tracking, and periodic inventory reconciliations.
• Recruit, onboard, and develop restaurant managers, kitchen leads, and floor staff; create schedules that protect service quality while meeting labor cost targets.
• Ensure compliance with Costa Rican labor law (Código de Trabajo), social security (CCSS), insurance (INS), and benefits (aguinaldo, vacation).
• Maintain health permits, municipal licenses, liquor licensing, fire safety, and equipment maintenance.
• Monitor guest feedback on Google, TripAdvisor, and social channels, addressing recurring issues.

Required profile

• Proven experience managing multiple restaurant locations with full P&L responsibility.
• Strong background in budgeting, forecasting, and cost control.
• Demonstrated ability to lead and develop a team of ~40 employees.
• Knowledge of Costa Rican health, labor, and licensing regulations.
• Experience in procurement, inventory management, and supplier negotiations.
